Seared Tuna Escabeche

Every village and house in Spain has their own escabeche recipe. Ours features yellowfin tuna two ways; one pickled with olives, carrots, garlic, and sherry vinegar, served atop the other – a beautifully seared and sliced rare tuna, dusted with ancho chili, finished with Meredith Family Farms micro cilantro

Ingredients: ancho chili, carrot-olive-tuna escabeche, micro cilantro

Shrimp & Grits Gnocchi

Drawing inspiration from the comforting flavors of Charleston-style shrimp & grits, these gnocchi made out of cheddar cheese grits are crisped up and topped with our house-made shrimp & bay scallop sausage.

Ingredients: shrimp & bay scallop sausage, cheddar grits gnocchi, bacon-pepper veloute

Pan Seared Scallops

Our rendition of the classic pan-seared scallops elevates this beloved dish to new heights. We start with perfectly seared scallops, delicately caramelized to a golden brown, resting atop a bed of cotija corn puddin’ that adds a creamy, savory foundation.

Ingredients: cotija corn puddin’, baby corn, fresno-chayote escabeche, tajin “caramel”
